BBQ pit Ideas I'm undecided

Hi Everyone,Well I'm getting ready to start building my new BBQ Pit and I was looking to see if I could get you guys to post me some PICS of yours and suggest anything and everything. I want to build the ultimate BBQ Pit. Or 2 actually. I have 1 piece of 24" diameter pipe with 1/2 inch thick walls. It is about 7ft. and I have a old propane tank I want to make into a pit and put on a trailer. It is about 7ft. and 30 inches in diameter. OF course both will have a fire box and maybe both with a smoker. I would also like to paint flames on them just cause I like flames. On the trailer I'm thinking possible propane tank with 1or2 burners and a sink. I'm just feel like I'm forgetting something. I don't want to start till I know exactly what I want. Main reason I'm a person that has to start and finish a project or it will sit forever.Thanx,Darrell

Reply:The Fatfrank one has the chimmney located at the right spot for smoking>at or just below the meat level. Both of them look very nice. The one on the yellow trailer is nice and compact. DavidDavid

Reply:The picture of the pit I posted was made by a guy named Jamie Geer from Ft Worth.  I was thinking of buying that one from him.  He was selling that one for $4800 and has people asking about them all the time.

Reply:JimboI followed his story as he was building that pit.  He had big problems getting the pit up to temperature when he built his fire in the firebox.  Bad design on connecting the firebox to the cooking chamber.  I think he used some type of tube to connect the two.

Reply:Hey guys, am I correct when I think you got a wood fire going in the box on the side, or do you have some kind of gas flame happening?
Reply:Yes Speedphreak you are right wood or chorcoal in the side firebox. A little something I like to do is get some chorcoal started (which takes about 15-30 minutes) and soak a piece of mesquite or other wood in water for 30-60 minutes and put that on top your coals. This will make a great smoke affect and flavor. NEVER use any wood that is green! It will give your food a bitter or nasty taste and it seems to never come out of the pit.AND AGAIN THANX FOR ALL OF YA'LLS & HELP KEEP IT COMING!!!
Reply:if you ever do some pork in it, go down to the butcher shop and get a slab of pork fat and tie it to the top of the slab of pig and never turn it over.btw, not to be picky but YA'LL is singular.ALL YA'LL is plural.if you pass thru S. Reply:Well guys, up here in the great white north about the only rigs around consist of a big spit with a halfassed gearbox and chain that rotates the whole critter.After readin all this information on smokers and roasters, I can't help but wonder why somebody ain't built one with a sliding chimney so it can perform both functions, smoke or cook?Then, I got to thinkin, bein naturally lazy like I am, why not build one with the racks on a chain setup like the old baker's oven that will keep the meat movin constantly?All this thinkin could be dangerous, but I ain't likely to build one cause I don't like that many people enough to feed em.Appreciation Gains You Recognition-

Reply:Here are a couple of ideas to consider when building a pit.1) Make the firebox square and line it with fire bricks.  Keeps heat in better and uses less fuel.2) The chimney should come out of the chamber above the fire box.  Put a piece of plate in the lower third of the chamber so the smoke and heat have to travel to the far end of the chamber before the smoke enters the top 2/3rds of the chamber with the meat. The smoke will then travel across the meat back to the other end of the chamber where the chimney is.    This will provide a much more even heat distribution in the chamber than if the smoke started at the firebox at one end and exhausted through the chimney at the other end of the chamber.3) It is better to make the pit the right size rather than too big and use tons of fuel.4) Make the firebox with a grill on top so you can sear the meat before placing it in the chamber to slowly cook.Just my two cents.oughtsix

Reply:First off , I just found this forum,, Great lookin place..I got into this very addicting welding hobby this summer,. The main reason was I wanted to build a BBQ Pit.. Reply:When you cut your door in the barrel, don't cut the corners until you have welded your hinges in place. Then go back and complete your corner cuts. This way the door aligns very close. It is real hard to cut door out completely and then go back and mount hinges. I learned the hard way on my first pit. I also found a low mounted exhaust to work better than one mounted high. Temperature seemed to stay more constant and wood seems to last longer.  Just some things that worked for me.MM 210Funny you should mention that ,, I too learned the hard way on my first Pit.. Cut the damn dorrs right out first thing , That was fun getting the hinges welded on..

Reply:The biggest problem I've seen with cookers (Texas style smokers) is too big a firebox too close to the oven.  They tend to have hot spots and have to be watched close or the food becomes cinders.  Which is okay if you want to cook with a smoker the way you do with a bar b que.The best one I've ever personally seen was more about cooking than looking good.  It is a Rube Goldberg on steroids kind of thing.  On top of the firebox is vessel with gate valves.  The vessel takes water and makes steam.  The gate valves send the steam to the right compartment at the right rate.Along the bottom of each oven is a perforated pipe.  It's for the steam.  There are two downsides of this system.  One, you need utensils for eating.  You grab a bone and all that's going to reach your lips is the bone.  The meat will hit the floor if you're lucky enough to get it out of the oven.  The other is it must be cleaned out after each use.  Moisture will get with some iron and make a whole, er, uh, hole, family.But this smoker has pull out trays made with hardware from a jet plane.  They're for warming and cooking.  There's a built in chili or bean pot for cooking sides.It's in Murphy TX.  And worth the price of admission to hear Sam explain cooking with a cooker.  It starts out with "first you have to have control.  And I have total control."He ain't lyin'.life is good
