Rotisserie Smoker Build

I have been contacted to build a trailer mounted rotisserie smoker that can hold 500 pounds of pork butt.  I have wanted to build a smoker for a long time.  I just didn't think the first one I build wiuld be this big.  I have a small grill/smoker at home & have prepared many different meats & vegies on it.  My main concern is to have enough surface area.  Does anyone know how many square inches are needed for 500 lbs of pork butt. Reply:depends how thick it is, go for a double stack or triple stack grill if space is a concern...ask the customer how big a grill they want, thats the safest way to go...Of all the things I lost I miss my mind the most...I know just enough about everything to be dangerous......You cant cure stupid..only kill it...
Reply:500lbs = 50 - 10lb pork butts! Must be thinking big time. These guys have been at it for some time & have squeezed all the space needed to do that with the SPK-500 model. They're asking just shy of $20 grand for one. Reply:The trays need to rotate inside the cooking chamber for a design like this.Just as a point of reference, my dad had a smoker that could smoke fifty 12 lb briskets at a time. It was a 750 gallon propane tank in a previous life. The single cook surface was about 3' x 12'.GravelThe difference between theory and practice is that in theory there is no difference.

Reply:My son bought a homebuilt unit with no rotisserie and we just tried it for the first time yesterday. Basically it's an insulated tin box about 5' high that uses a stove element in the bottom to heat the wood chips and an oven element around it to control the temp. We had it stored in my cold storage shed and it was going to be a beast to move again so we thought we'd just vent the chimney out a window. Bad plan. There was no seal around the door (despite having 2 clasp locks) so it smoked the shed up really bad. The hams and bacons seem to have come out very nice though.
