New to welding here, just bought the Lincoln 175HD MIG

I own a used car dealership, but have been working on cars my whole life.  I own a Turboed Honda S2000 and I want to learn to weld and build my own 3 inch turbo back exhaust.Anyways here I am now and next week will be my first time welding.What is the best gas to use to weld 16 gauge stainless steel for MIG welding.I have been reading a lot here and the general consensus is 75/25 mix or should i go straight 100
