Smoker / Pizza Oven

Well I have been lurking and reading long enough. Time to throw this one out there and see what you all think. Will it work as a smoker and a pizza oven? Have been working on this on and off for about a month, and it's close to being ready to fire it up. Other than the relative volumes of the firebox and smoke box, i have been making it up as I go along. The idea for a convective pizza oven (middle compartment) was a total afterthought, but once lined with fire bricks(sides and bottom), it will hopefully hold a 500F+ temp. Who knows... The design is fairly straightforward as seen in the photos. Still need to figure out an air intake for the firebox and some sort of simple damper for the 2in square tube coming into the smoke chamber. For those interested, all panels were cut out of 3/16 plate, with the exception of the bottom of the firebox, which is 1/4in plate. What do you think guys?Brad Attached Images

Reply:WOW are you sure it isn't a vault from doun at the bank? That looks good. I don't know anything about smokers or BBQ's but that there is some fine lookin work. I for one am waiting to hear how it does. Reply:Thanks!This forum is definitely a wealth of information and i have enjoyed reading daily for the past 6 months or so. It's also proved to be quite entertaining at times as well!Just picked up a bag of hickory chips and have them soaking now. Actually, the plan is to heat this thing up once to see how it flows. Still have the handles to make and a little more grinding to do. There are few things in the garage that don't yet have a sufficient layer of grinder dust on them yet,  but i'll take care of that shortly. I really don't know much of anything about proper smoker construction, much less pizza oven building, so i'm quite sure some modifications will be necessary after the first run. More pictures to come!Brad

Reply:Door handles are done.... Just the air intake then time to cook! Eventually, i have a can of stove paint that will make it's way onto the outside, but I figure it first needs to make at least one pizza to make sure all is working. Attached Images
Reply:I like the basic design. Is the pizza chamber the one directly above the fire box? If so, that looks like it would work for pizza as you don't want a sooty flavor in the pizza. Make sure you also have a way to control smoke leaving. Reply:Yes, that is the pizza oven in the middle. Actually, there are now dampers on the two tubes coming into the smoke chamber and a simple slide that regulates the exhaust of smoke out of the main box. The slide is below the bypass chimney so the only unregulated flow is out of the firebox. I didn't see any reason to restrict that. Everything actually draws quite well after a quick test this afternoon. One thing for sure though. This Summumabitch weighs a ton! Still quite stable though despite being inherently top-heavy.

Reply:I use pipe nipples and ball valves for the air intake.  So many people are using stokers and all these temperature controlled fans to control the heat these days.  That will be a bonus if you ever decide to get sell the smoker.  Somewhere bbq bretheren or smoker ring forum there is a formula that will tell you how much intake and exhaust you need for the smoker to function properly.  You could also go with the more intake the better, too much is OK as long as you can control air intake and exhaust.I know you have your doors finished, but I have seen where people are using the doors from a barrel stove kit.  They are $50.00 from Northern Tool and they have the vents for air intake, and look nice.You could also go two different ways with your cooker.  If you could find a piece of marble or some type of cooking stone for your pizza that would be pretty sweet.  You could also add a removable water pan for when you smoke.  I have to admit I am partial to using a water pan!All in all that is a very nice cooker, and I like the idea of cooking pizza!
Reply:No pizza yet folks... Picking up the hearth bricks tomorrow. Hope to get a pie going tomorrow night. Did get a chance to finish up the air intake and smoke dampers. Thinking about putting a small drain in the drip pan. It's sealed up tight right now, but i imagine that it will be a bitch to clean out without some sort of drain. Can anyone give me an idea of a good way to remove some slight warping in one of the side panels? Once the grill grate is installed, it comes back close to what it should be. I have tried a floor jack and 4x4, but as soon as i take tension off of it, it returns to its previous jacked up form. It's really not that bad, but i would like to get it back in proper shape. I have been hesitant to heat it up with the OA torch, thinking it may only cause additional warping, but i'm thinking heat may be the only way. You might be able to see the problem in the last picture. It happens to be right where the small pieces of angle are attached to make the grill supports.Brad Attached Images

Reply:Lanse,I used mostly MIG with .030 wire. For the more intricate stuff, if you could possibly call it that, i used the TIG machine with 3/32 Thoriated tungsten and 3/32 70S-2 filler. Oh, and after im done with this thing, i think flap discs should be considered a process too, as i have been through dozens of them. I'm trying to make the corners as seamless as possible, and it has taken a TON of grinding to make that happen. My poor makita cordless grinder has done the brunt of the work. I will say that the PM45 has made cutting so much fun with this. Had a hobart airforce previously and i would easily have chewed through a hundred dollars worth of tips so far. Reply:Well, after a redo of the firebox chimney and the addition of an additional air intake in the back (couldn't get oven temp above 350), I very well may have stumbled upon a working design.
