Smoker tune up.

"I am not a cook", to quote former President Nixon. Or, something like that...My nephew's roommate had this smoker. His dad put it together, but part of it had rusted to pieces, so I told him I would try to repair it. Not knowing anything about smoking food, I am really taking a crash course. I gave it a test fire today with a turkey, yeah, my first turkey as well,  first smoke ever also!  It has been a long day, but it came out very juicy and tender. Right about 7.5 hours on the smoke. Lots for me to learn about cooking! I still need to add yet another air intake source in the fire box, but it is coming along. Time to clean up... Attached ImagesCity of L.A. Reply:Turkey looks great to me. So how come a guy couldn't build one with the fire box underneath? You could still pipe in the heat anywhere you wanted. Reply:If I were to build a smoker it wouldn't be a big one at all. Down right small in fact. With just me and the lil woman no need to have anything huge. I'd bet something about the 20 to 35 lb propane tank size would work good. That would do a couple of game hens or even a turkey.
