The 'ol 11yo Brinkmann smoker finally said it had had enough and with no practical way to keep the fire contained  any more it was time to get started on the new one promised to Judy for Mother's day last year. The "new" one was started mid-April and isn't quite finished as it still needs the tongue and jack finished, propane burner and tank for the boiler/fryer mounted on the tongue ahead of the main firebox, the smoker box and racks media blasted, the air damper fab'd for the smoker firebox door, wood insulators made for the handles and of course painted following curing.But Judy couldn't wait (me either) and we ran a couple "test cooks" on the grill Sunday and Monday evenings to see how the temperature control was going to perform - which much to our pleasure worked like a dream and allowed very precise temperature control in both the grill and smoker box.I've never seen one but the idea of making a pull-out rack below the smoker rack in the grill sounded like a good idea so I planned for it by adding a 6" to the grill section once the water softener tank was cut in half.  Works like a charm and I'm very happy with it.  Pulling it out to flip the 'burgers doesn't dump all the heat as with opening the lid.The main firebox started out as an old lead box from a parts Big 20 and the smoker box was an old storage cabinet salvaged from the scrap bin over a year ago.  Oh yeah, did I say the whole thing was fab'd from scrap and recycled materials?  Everything that is except the two new temperature gauges - one in the grill lid and one in the smoker box door.  I plan to install the original Brinkmann in the slide out grill rack to monitor cooking temperature at that level.  Material source list is long and varied and even the Brinkmann filled out a donor card and gave up a number of "organs" so it still lives on.'nuf said and you can see the good, the bad and the ugly of the build here http://s983.photobucket.com/albums/a...bum_view_click on Photobucket but below are a few select shots to sum it up to date.Thanks for looking.MM200 w/Spoolmatic 1Syncrowave 180SDBobcat 225G Plus - LP/NGMUTT Suitcase WirefeederWC-1S/Spoolmatic 1HF-251D-1PakMaster 100XL '68 Red Face Code #6633 projectStar Jet 21-110Save Second Base!
Reply:Dayhem Duane-------------that thing is pretty elaborate once you get to looking at all the individual pieces and parts. You must have had quite a bit of thinking and planning into it. A ton of welds in it too. Great build. My wife wants a BBQ I think I'll just get her a bag of briquettes and a 5 gallon bucket . Maybe a fridge grate for the top. Reply:Thanks for the kind words guys and yes Sandy, there's been a lot of seat time trying to figure out what I was going to do next with what I had to work with.And I can tell you this much, building from scrap and recycled materials may save $$$ but it sure takes a whole lot more time. Here's the results of today's efforts to tie up a bunch of loose ends.Installed a Bull Dog hitch that was cut off for an unknown reason.  Was plug welded and a double bead run on the outside on a piece of 1/4" plate that was then welded to the end of the frame tongue.Smoker box firebox door damper."Bird" hanger and start of the rotating sausage/link rack in the smoker box.  Centered up the handle in the grill lid (welded original holes closed and ground smooth) and installed a temperature gauge in the front of the slide-out rack.Details of the rotating hanger.  Bolt holds section of golfcart kingpin rigid agains ceiling of smoker box while section of pipe that 8" pieces of 3/8" rebar are welded to rotates freely.Still need to media blast the inside of the smoker box and racks before curing.Thanks for looking.Last edited by duaneb55; 06-18-2011 at 11:31 PM.MM200 w/Spoolmatic 1Syncrowave 180SDBobcat 225G Plus - LP/NGMUTT Suitcase WirefeederWC-1S/Spoolmatic 1HF-251D-1PakMaster 100XL '68 Red Face Code #6633 projectStar Jet 21-110Save Second Base!

Reply:Thats a fine job on the BBQ/smoker. You Texans wear out BBQ's faster than any other bunch I have run across. I use to do work for pipe line welders from most from TX and they were the only bunch that would break for lunch and fire up the grill, always mounted on the back of the truck. I really liked being there at lunch. Great bunch of guys, altho they were hard on the Jack Daniel's

You may be the most resourcefull person on the site.  You have proven time & agian you can make something from nothing ( suite case welders, grills, anything from a bed frame).  You never say or beat anyone down on the web & you help anyone with a down welder or such that even asks for it, you sir deserve a real award of some kind.  Not trying to suck up but i have learned alot from your threads & enjoy them alot. Reply:Well, I have NO idea when I'll be able to get around to blasting the inside of the main smoker box and racks but Judy had some pork shoulders just waiting to be smoked for the holiday w/e so today was the day.We overslept this morning and were off to 1-1/2 late start but they went on the grill section upper smoking rack at 7:30 with the water/apple juice/drip pans sitting on the pull out grill drawer as designed.Fire/smoking wood is just Red Oak for this run.  This is just a few pieces from the main stack.  We've used Mesquite in the old Brinkmann in the past and I'll let Judy decide if she wants to try some fruit woods in the future.Temperature control at an average 230-240F is proving easy while maintaining plenty of smoke.  That glove isn't because the damper handle gets too hot to touch - it's because the damper handle is a real "knee-knocker". Reply:Thanks justinT.These went in at 5a.m. this morning.  8+ and 12 pounder briskets that are scheduled for a 12 hour and 18 hour cook respectively @ 225F.Notice the nicely painted outer surfaces of the smoker? I wonder if it helps break doun the meat. Do you just brush the meat or perhaps inject into the roast? Reply:You're a cruel man, Duane. Taunting us with your beautifully caramelized chunks of meaty goodness! I haven't a smoker but the Mrs. is gone to Deutchland for a couple weeks and the grocery store has whole pork shoulder on sale. Might have to get some wood chips and have a go using the propane BBQ. I'll just use one burner at the end and put the meat at the other. I just can't stand to sit back and be teased like this. 200amp Air Liquide MIG, Hypertherm Plasma, Harris torches, Optrel helmet, Makita angle grinders, Pre-China Delta chop saw and belt sander, Miller leathers, shop made jigs etc, North- welders backpack.

Reply:A combination of pork loin ribs and country ribs went in the smoker today at 1pm after sitting rubbed down with a KC Rib Rub for 24hrs.  Target temperature 220F for 4+ hours.Flip and rotate at 2 hours in . . .. . . and topped and flipped with her homemade "Mutha Sauce" from the Syracuse, NY Dinosaur Bar-B-Que biker roadhouse recipe book at 4:30.  Flipped/sauced down again at 5 and pulled 'em out at 6.  Mmm mmm good!I'd take a shot of them on the plate but my hands are too messy. After a few cooks and smokes with it I now have a few ideas for some mods to hopefully make it cook a little better and help keep from making such a mess under it with the pull-out grill "drawer" that works awesome IMO.That is if we can stop cooking in it long enough.
