Mini offset smoker, my first.

This project has been going on all summer. I am trying to keep this one small, to learn what works for me in the space that I have, or may have in the future. Despite life's little side-tracks, like the clutch job, plumbing bursts, roof disintegration, you know the usual stuff,  I am determined to fire this up! I redesigned the cook chamber door after the style that KAM came up with (the smoke ring forum), especially since my fire box door refused to play nicely, and will have to be refit yet again. Oh, the impetus for beginning this project came from concern over my modification of the small pressure vessel, which never failed, but...why push my luck? Let there be smoke! Reply:I have an offset as well. I found that and it has been my experience that the offset requires more effort to maintain a steady cooking temperature. If you are trying to smoke a brisket, the fire ring in my UDS will burn for 12 -18 hours @ 225 to 275 degrees. These Ugly Drum Smokers can be made for cheap. The trick is in the fire basket and using a food grade only 55 gallon drum. One of the reasons I purchased my Miller 211. Reply:Oxy-fuel and stick, with a dash of tig. No mig allowed.  It just depends on thickness mainly, and supplies on hand.Besides, I am without a mig gun right now. City of L.A. Reply:Well, it's done; in a test phase sort-of-way.    Lessons learned are easy to remember because all of my mistakes are etched in steel!  I smoked a small brisket yesterday, and I can see now brisket will take many more attemps to get them tender and juicy. That is the way of things.The smoker cruised all day at 225* with flat, even temperatures across the full width of the cook chamber. Adjustments are a breeze up to about 350-375* max., during my initial curing. Although at that rate of burn, the hot spot is much more pronounced on the left.Well, it must have been edible, because it was all gone within a couple of hours. Thanks to everyone at The Smoke Ring forum, my first cooker was a joy to try out for the first time. I am already planning another one in my head for a friend!  Breaking in the new little pit on Christmas Day was a real blessing!   City of L.A.
