old smoker new project

We had a good day to work, and thought I would post a few pics. This is our old smoker that we decided to build with a rotisery.My drinkin I mean cookin buddy at work. Note the pro series weld table with heavy duty legs, this was upgraded at 8 am today from a piece of plywood. A few shelves and the spider web.Four large shelves and one small, we ran out of time. When done it will have 4 shelve 67x12, and 4 shelves 6x67. Figure the small one will fit baby backs or a hell of alot of hotdogs.Note to self.......The jacket in the avatar pic is Not for welding....EVER

Reply:Basically, your trays “carousel” around the main shaft avoiding hot spots on the cooker, right? For true rotisserie each tray would have to rotate around their own center, a lot more mechanically involving with gears etc. etc.Nice craftsmanship nonetheless
Reply:Well the comment was made again yesterday about building these for profit. All were missing is a shop a cut table a real weld table oh ya and the funds to get going. Funds could be a problem since someone told me the other day that steel is going up like 40%. Man I hope there wrong.We are using a 40 to 1 reduction box. Not sure but most likley will also reduce from maybe a low rpm moter if we can find it cheap. We are planning somewhere near a 16" gear on the main shaft and a 2 or 3" on the moter. The only thing were worried about is if we have to cook a bunch of briskets. Were probally lookin at near 600+ lbs when full. Everyone is welcome when we cook. You just cant drop off food and exepect it to be cooked when you come back...... thats what the neighbor triesI tell everyone if I am cookin anyways bring your food and hang out while it cooks...if the rig is running right it doesnt take much of a babysitter.I'll post more pics, its gona be a week or two tho. I think my kids are coming next weekend and that could prevent working on the smoker.TomNote to self.......The jacket in the avatar pic is Not for welding....EVER
Reply:Yes Joe your right 100%.. This is as close as we could get, but we will have a thermostat and draft fan to control the fire and a convection fan to avoid the hot spots from side to side.Thanks for the intrest.TomNote to self.......The jacket in the avatar pic is Not for welding....EVER

Reply:Sorry but with the rain and having to work a ton and a half of OT we havent had time to do even one thing to the new rig. I also had my doubts about the greese but two fellow cookers tell us that many rigs are set up this way. Reply:working in the steel industry ( the mills where it is made as opposed to the middlemen who sell it) I can guarentee you that steel is rocketing. only thing going up faster are copper and its derivitives.Grab all the scrap you can find, hoard hoard.beautiful rotisseriee (sp)when i was in high school their huge smokers operated the exact same way. with the racks laid out and swinging the same wayas long as the bearing has high temp grease you wont have any troubleinsert thoughtful quote from someone else2000 Thermal Arc 300GTSW 3.5 hours1946 Monarch 20 x 54 Lathe1998 Supermax 10x54 Mill2004 Haco Atlantic 1/2" Capacity Lasernot mine but i get to play with it
Reply:Here is just a couple new pics. I havent had the joy of working on the rig in any of these pics due to the current work load I have endured because of the copper thiefs!!!! The good news is while taking these pics my buddy told me hopefully sunday will be the first fire, if he is lucky.Sorry I didnt get any better detail on the progress.Note to self.......The jacket in the avatar pic is Not for welding....EVER

Reply:NaaaaWe would both rather light the rig, and prep the meat then drag the TV out to the garage and pop the top on a cold beverage. The best part of this rig is that when we set the temp there isnt much to take care of. Still gota watch the meat temp and keep things moist, and toss a log every now and then, the cooker temp will take care of itself. Now I know there is about as many people that dislike propane as there is people that like chinese taking american jobs.Well after the last fund raiser that we did, I cant even count how many people said (There is NO NO way that I would ever eat something cooked on propane.) One week later many of that same bunch called and said MAN you all really know how to cook. We did tell these people that it all was cooked with propane assist, they agreed that there was no taste of the propane and would buy for the next fundraiser.Note to self.......The jacket in the avatar pic is Not for welding....EVER
