BBQ smoker questions?

I'm building a BBQ smoker and I want to use stainless steel for the racks. What type of stainless and tig filler metal do I need? I'm using mild steel for the entire cabinet, is there any issue with leaving the mill scale on the steel on the inside? Is there any consideration with anything getting into the food while cooking? Reply:Finally a thread where I might be able to contribute; my other favorite activities are building cookers and cooking BBQ. FWIW I have not found the need to make SS grates (althought I'm really impressed if that is where you want to go). In my experience simple expanded metal and angle grates, once curred in the smoker work very well. I don't feel there is an issue with mill scale on the interior although I do blast my cookers inside and out; paint the exterior with high temp and just cure the interior with a good cooking grade oil.
Reply:thank you for your input, I thought I asked a nuclear physics question I plan on using 1/4 inch round stock in 304 stainless for the grates and i believe its 308L filler and tig weld it together. But i didn't know about the mill scale, I will remove the mill scale and coat the interior with vegetable oil and fire it up. i will post picks in the project section when its completed. Reply:I have some 309, so that will work.Being that filler metal gets expensive for ss. Thanks for the tip

Reply:My opinion is the mill scale is quite harmless. If a quick pass from a wire wheel doesn't knock it loose, it may as well stay there.
