I have a cabinet style smoker that is propane.  Basically a turkey fryer burner with a cast iron box for wood to get smoke.  I could never get enough smoke, so I built an UDS. Now what to do with the other smoker.  I am thinking outdoor, portable (ish) pizza oven.My questions are, do you all think the propane will get hot enough?  I am hoping for 700 degrees.  Do you think the quarry tile would hold up to the heat? If I can use that instead of an expensive pizza stone that would be great.  Or does anyone have an idea for pizza stone that I could rest on the racks in the smoker.  Has anyone made a pizza stone? In order to help with the heat, should I insulate the smoker?  If so, I am thinking of building a box around the existing cabinet, and insulating in between.  This would require welding etc. which I think is the only part of this project that would. Although my initial idea would have required significantly more.
Reply:http://www.daniellefence.com/ImageView.aspx?id=2121Here is one you will want to look at. Wood burning down below and it heats a stone or fire brick. The heat also comes around the outsides to give a little smoke. Reply:Yeah, if you could snap a few pics that would be great.I am hopeful that in my cabinet smoker I could have three pizzas at a time.  That is, if it is getting hot enough, and I can make some pizza stones.  Thanks much.

Reply:Great.  Thanks.  Gives me some ideas. I am assuming the part with the fire brick is the fire box.  Is that oven insulated at all?
Reply:Cool thread, I've started to make one myself.... I intended to line it with fire bricks, and heat it with a turkey fryer burner. I'll probably build a stainless outer cover and add insulation between the mild steel oven, and the outer shell.Proud to support Reliable Sheet Metal Works, in Fullerton, CA.Full service sheet metal fabrication serving Orange County since 1926.http://www.reliablesheetmetal.com
Reply:That is exactly what I am thinking too.  I am having a hard time finding the right type of insulation. That will handle the higher heat of an oven.

Reply:I was just thinking of using pearlite, I've heard of people using it in rocket stoves. It's really light too. Just weld 'er up and leave a bung hole for filling.Proud to support Reliable Sheet Metal Works, in Fullerton, CA.Full service sheet metal fabrication serving Orange County since 1926.http://www.reliablesheetmetal.com
Reply:Wow, that kettle pizza sure looks like a simple way to go about it....Proud to support Reliable Sheet Metal Works, in Fullerton, CA.Full service sheet metal fabrication serving Orange County since 1926.http://www.reliablesheetmetal.com
Reply:I was unfamiliar with Pearlite.  After looking around online, that seems like it might be the way to go.Now I just need to find a place locally that sells it.  And go on from there. Thanks
Reply:By using gas, or propane, you can purchase a Forge Torch and adapt it in the firebox so that it is indirect heat and should give you plenty of heat and also it is Great for Steaks getting to that 1500 degree heat to sear thick steaks like the Big Boys do. It is simple and very controllable with the gauges on the torch to let you monitor the gas input. 700 degrees would be low setting and attainable very easy. Go to ebay and check out the Forge Torches by themselves. I bought mine for 85.00 and it is a Cadillac. GOod Luck!Lincoln 305GUnion Carbide TorchDon't Worry About the Mule~Load the Wagon!
Reply:Thanks Joe Bill Moad, and if the pizza oven didn't work out I have a forge Insterno, thanks for the idea of the Perlite.  I talked with a manufacturer and this application is just fine.  Better still, the Perlite is light weight, and best is it is cheap. They are suggesting 4 inches, which is fine by me.  Time to gather parts.

Reply:You might consider McMaster-Carr item #93315K34 Roll insulation. I used 1" thick for the coffee roaster I'm building. B4 I retired, I used it (in several thicknesses up to 3") to insulate different areas of furnaces and lehrs. We didn't buy it from McMaster Carr but it's the same insulation.See HereI don't work for McMaster-Carr and am not trying to sell anything.DannyMy SiteJust worrying 'bout what I can't get to today.
Reply:Ceramic wool works great for high heat insulation.  We use it on the combustor areas of our boilers.  You need to find an industrial insulating company for the product.  It may be what McMaster is selling, I did not check.Dan
